Is popcorn ultra-processed?
Kernels are group 1. Most bags are group 4.
It depends entirely on how far along the process you buy it, which makes popcorn a neat demonstration of what NOVA is actually measuring.
- Kernels in a bag: group 1. Dried maize, nothing added.
- Popped at home with oil and salt: group 3.
- Ready-to-eat plain or lightly salted: usually group 3.
- Sweet, salted-caramel or flavoured bags: group 4, from flavourings and glucose syrups.
- Microwave popcorn: usually group 4, from the flavourings and fats in the bag.
The same maize can therefore be group 1, group 3 or group 4 depending only on what was done to it and by whom, which is the classification's whole proposition stated in a single ingredient.
Working this out from a receipt is harder than from a packet, because a till prints about twenty characters of product name and no ingredients list. That is the problem Bagged exists to solve, and how a receipt is structured explains why it is the hard part.
