Are nuts ultra-processed?
Plain is group 1. Flavoured coatings are not.
Plain nuts are group 1, raw or roasted. Roasting is heat and removes moisture, which does not move a food.
- Raw or plain roasted: group 1.
- Salted, or roasted in oil: group 3, since salt and oil are group 2.
- Dry roasted: usually group 4, and this is the one that surprises people. The seasoning typically carries flavourings, flavour enhancers and wheat derivatives.
- Honey roasted, chilli, coated or shell-on flavoured: group 4.
- Nut butters follow peanut butter: plain is group 3.
Dry roasted is the trap
The name sounds like the plainest option on the shelf and generally describes the most formulated one. Dry roasted peanuts are usually coated in a seasoning containing flavour enhancers, which is why they taste of something and plain roasted ones taste of peanut.
