Are energy drinks ultra-processed?

Yes, and this is one of the few categories on this site with no split in it at all. An energy drink is group 4 by construction.

The product is water with a formulation dissolved in it: caffeine, taurine, added vitamins, acidity regulators, flavourings, colours, and either sugar or a non-sugar sweetener. Every one of those after the water is a group 4 marker, and the drink is nothing but those.

Sugar-free versions are group 4 for an additional reason rather than a lesser one: removing the sugar means adding a sweetener, and non-sugar sweeteners are a marker on their own. The same relationship as reduced-sugar baked beans and light mayonnaise.
